Day 8: Chocolate Cake with Ganache (30 Days of Vegan Recipes)

I made my very first vegan cake this weekend to celebrate my husband's birthday. I had never baked a vegan cake before and didn't know what the results would be, but now I can say that it's very easy and quick and not complicated at all! Another thing, I even made a delish vegan chocolate ganache which I thought it was impossible in the beginning but I'm so glad that I was wrong. My husband loved the cake and so did my family, so this recipe is definitely a winner. Take a look:

2 cups all-purpose flour
1 cup pure cane sugar
3 tablespoons cocoa
1 teaspoon baking powder
Pinch of salt
1/2 cup vegetable oil or canola oil
1 tablespoon vinegar
1 teaspoon vanilla extract
1 cup of  cold water

Pre heat oven to 350F degrees. In a large bowl, combine well the dry ingredients; flour, sugar, cocoa, baking powder and salt. In another bowl, combine the wet ingredients; oil, vinegar, vanilla extract and water. Slowing start pouring the wet mixture into the dry ingredients, beating slowing until everything is well incorporated. Pour batter into a buttered bundt cake pan. Bake for 40 minutes. Let cake cool completely before taking out of the cake pan. Pour ganache over and decorate with sprinkles. Serve and enjoy!

1 cup of soy milk
2 tablespoons cocoa
2 tablespoons pure cane sugar
1 tablespoon vegan butter (I used Earth Balance)

Put all the ingredients into a small sauce pan over medium/high heat. Let it came to a boil and let it boil until it thickens, about 5-8 minutes depending. Pour ganache over cooled cake and decorate with sprinkles or nuts or strawberries.
