Day 7: Tofurky Sausage with Onion, Mushrooms & Spinach (30 days of Vegan Recipes)

This was my first time cooking with tofurky sausage and I must say: I was quite impressed! I was a little skeptical in the beginning since I had never used before but the flavor of the tofurky sausage is really delicious with the sun-dried tomatoes and basil and the texture is perfect too. The sausage combined really well with onions, mushrooms and spinach, take a look:

Recipe by Sweet Caroline

1 package (14 oz.) tofurky italian sausage, cut into rounds
2 cloves garlic, minced
1 yellow onion, sliced
1 1/2 cups baby bella mushrooms, sliced
3 cups baby spinach
2 tablespoons vegetable oil or olive oil
Salt and black pepper

In a large pan, heat oil over medium/high heat. Add tofurky sausage and cook until it browns a little in color. Add garlic, onions and mushrooms, sauté until onion is translucent. Add spinach and cook until it wilts, season with salt and black pepper. Serve and enjoy!
