Day 5: Chickpea, Carrot & Zucchini Patties (30 days of Vegan Recipes)

These little patties are perfect to eat with a salad, to make a pita sandwich with some spinach or to just eat by itself, either way it's delish! Take a look:

Ingredients (makes about 8 small patties):
1 (14 oz.) can chickpeas, drained and rinsed
1 medium carrot, shredded
1 medium zucchini, shredded
1/3 cup seasoned breadcrumbs
1/4 teaspoon ground cumin
Salt and black pepper
Chopped chives for garnish
Oil for frying

In a food processor, add the chickpeas and pulse until a paste forms (if needed add a little water). Transfer chickpea paste to a bowl, add carrot, zucchini, breadcrumbs, ground cumin and season with salt and black pepper. Mix to combine well. Form little patties. In a non-stick skillet, heat about 1/4 inch of vegetable oil, once the oil is hot, add a few patties at a time. Let it cook on each side until golden in color. Remove to a plate lined with paper towel. Garnish with chives. Serve hot and enjoy!
