Day 23: My Ultimate Portobello Mushroom Burger (30 Days of Vegan Recipes)

This portobello mushroom burger will satisfy even the most meat eaters, this burger is perfect…peeeeeeeerfect! Get the point? Anyways, the flavors are insane together, take a look:

Recipe by Sweet Caroline

Directions (makes 4 burgers):
4 Portobello mushrooms, stems removed and cleaned
2 tablespoons olive oil
2 tablespoons soy sauce
Few slices of tomato
Few slices of onion
Few lettuce leaves
Vegan mayo
Pickles or sweet relish
Buns of your choice

In a small bowl, whisk together the olive oil and soy sauce. In a shallow dish, add the mushroom caps and pour over them the mixture of olive and soy sauce, marinade for 5-10 minutes. Heat a large skillet sprayed with cooking spray. Add the mushroom caps and cook on each side until they're brown in color. Remove from heat. To assemble burgers: spread a good amount of mayo on bottom bun, add mustard, pickles or sweet relish, portobello mushroom, tomato, onion, lettuce and spread a good amount of mayo on top bun and place it on top. Serve and enjoy!
