Day 21: Sautéed Cannellini Beans with Colorful Bell Peppers (30 Days of Vegan Recipes)

This simple and colorful bean dish it's very flavorful, the heartiness of the cannellini beans and the sweetness from the peppers worked really well together. Take a look:

Recipe by Sweet Caroline

2 tablespoons olive oil
3 cloves garlic, minced
1/2 yellow onion, diced
1/4 green bell pepper, diced
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1/4 orange bell pepper, diced
1 (15 oz.) can cannellini beans, drained and rinsed
2 tablespoons of chopped cilantro
Salt and black pepper

In a large skillet, heat olive oil over medium/high heat. Add garlic and sauté until golden in color. Add onion and bell peppers, sauté until onion is translucent and pepper are a bit tender. Add cannellini beans and cilantro, season with salt and black pepper. Serve and enjoy!
