Day 2: Torte with Corn & Hearts of Palm (30 days of Vegan Recipes)

I love making savory tortes, this one you can get creative and add any vegetables that you love for a very satisfying meal. Take a look:

For batter
4 cups flour
3 cups water
1/2 cup oil (vegetable or canola)
3 teaspoons of baking powder
Salt, black pepper and oregano to taste

For filling
1 tablespoon olive oil
1 yellow onion, diced
2 cups of frozen kernel corn, thawed
1 (14 oz.) can of hearts of palm, drained and sliced
1/2 tablespoon ground cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
Handful of chopped parsley and green onions

For filling: In a large skillet, heat olive oil over high/medium heat. Add diced onions and sauté until translucent. Add corn, ground cumin, salt and black pepper and sauté for a couple more minutes. Add sliced hearts of palm and chopped herbs and mix to combine well. Remove from heat and let it cool slightly. For batter: In a blender, combine all the ingredients and beat until smooth. To assemble: Pour half the batter into a greased 9"x13" baking dish, add the filling on top of the batter, then pour the remaining batter to cover the filling completely. Bake in a pre heat oven at 350F degrees for 45-50 minutes. Serve hot or at room temperature. Enjoy!
