Day 13: Pierogies with Tomato Sauce and Basil (30 Days of Vegan Recipes)

Here's a really simple yet delicious dinner idea that I'm sure everyone will enjoy and love. Take a look:

Recipe by Sweet Caroline

2 packages of frozen pierogies
1 tablespoon olive oil
3 cloves garlic, minced
1/2 yellow onion, diced
1 1/2 cups of tomato puree
4 tablespoons of chopped basil
Salt and black pepper

In a medium sauce pan, heat olive oil over medium/high heat. Add garlic and onion, sauté until onion is translucent. Pour tomato puree, bring to a simmer and continue to let cook for a couple of minutes. Season with salt and black pepper, add 3 tablespoons of chopped basil. In a large sauce pan, add water and bring to a boil. Add pirogues and let it cook until warmed through, drain. Serve warm pirogues with tomato sauce and garnish with remaining basil. Enjoy!
