Day 12: Colorful Couscous Salad (30 Days of Vegan Recipes)

This salad takes about 5 minutes to make and it's so flavorful and colorful, it has become my go-to salad for the past few days. Take a look:

Recipe by Sweet Caroline

3/4 cup couscous
1 cup water
1 tablespoon vegan butter
1/2 green bell pepper, diced
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1/2 orange bell pepper, diced
2 cups arugula
1/8 teaspoon ground cumin
1/8 teaspoon paprika
Juice of 1 lemon
Salt and black pepper

In a medium saucepan, bring water and butter to a boil. Stir in couscous and cover. Remove from heat and let stand for 5 minutes. Fluff couscous lightly with a fork and transfer to a bowl, combine diced bell pepper, arugula, cumin, paprika and lemon juice. Season with salt and black pepper. Serve right away or chill for 30 minutes. Enjoy!
