Spinach Meatballs

We got home last night from our vacation, I'm still feeling tired and lost with so many things to do; bags to unpack, clothes to wash and the list goes on and on. Before I share our vacation photos here at the blog, I'm going to share a with few recipes that I made ahead of time and I hope you'll enjoy them since they're delicious. Today, I'm sharing a super easy spinach meatballs and tomorrow I'll be sharing a delicious recipe of mashed potatoes with leeks and blue cheese. So be sure to be back to here tomorrow get the recipe. Recipe by Sweet Caroline

1 lb. combination of ground beef and pork
2 cups baby spinach
1/2 yellow onion, diced
3 cloves garlic, minced
1 tablespoon olive oil
1/2 cup seasoned breadcrumbs
1 egg, beaten
Salt and black pepper

In a large skillet, heat olive oil over medium/high heat. Add onions and garlic, sauté until onions are translucent. Add spinach, let it cook until it wilts. Season with salt and pepper. Remove from heat and let it cool slightly. Pre heat oven to 400 degrees. Line a baking sheet with parchment paper, set aside. In a bowl; add meat, sautéed spinach, breadcrumbs and egg. Mix to combine well all the ingredients. Season with salt and pepper. Form meatballs and place in the prepare baking sheet. Bake for 20-25 minutes. Serve and enjoy!
