Leeks & Mozzarella Pizza

I believe leeks are under rated and under appreciated, I love to use them and try to add them to almost anything. Today's recipe showcases the leeks flavor and how well it combines with fresh mozzarella. Take a look:

Recipe by Sweet Caroline

1 naan bread
1 leek, thinly sliced and washed
Few slices fresh mozzarella
2 tablespoons pesto
1 tablespoon olive oil
Salt and black pepper

In a large skillet, heat olive oil over medium/high heat. Add leeks, sauté until leeks soften. Season with salt. Let it cool slightly. Place naan bread on a non stick baking sheet, sprayed with cooking spray. Spread pesto evenly on naan bread, arrange mozzarella slices, add sautéed leeks on top and finish with black pepper. Bake at 400 degrees for 4-5 minutes or until mozzarella melts. Serve and enjoy!
