Baked Tilapia with Onion, Bell Peppers & Tomatoes

When I first started blogging, I shared this recipe without a photo to go along with and I've always regretted not taking a photo of such a beautiful dish. I though it would be fun to do a recipe do-over and I must say I love how it looks and how it taste too. Take a look:

Recipe by Sweet Caroline

4 tilapia fillets
Salt and black pepper
½ white onion, diced
¼ yellow bell pepper, diced
¼ orange bell pepper, diced
2 plum tomato, diced
2 tablespoons butter
2 tablespoons olive oil
A handful of chopped parsley

Pre-heat oven to 375 degrees. Rinse fish and pat dry; place on a non-stick baking sheet. Season each fillet with salt and pepper, drizzle with olive oil. In a bowl mix the onion, bell peppers and tomatoes. Place a little of the mixture on top of each fillet. Place a pat of butter on each fillet and cook in the oven for 10 to 12 minutes (until fish is flaky). Garnish with the parsley and serve immediately. Enjoy!

Carol, to muna dieta danada, so comendo tilapia kkkk, quando vi essa foto no IG pensei essa vou ter fazer kkkk. Ficou lindo com os temperos emcima e deve ter ficado muito bom. Esse Taquinho passa bem, hem?
