Tilapia with Spicy Lime Butter

This dish couldn't be more easier to make, the spicy lime compound butter it's the star of the dish and it's perfect with chicken too. Take a look:


Recipe by Sweet Caroline

Ingredients:
4 tilapia fillets
3 tablespoons butter, at room temperature
1/2 teaspoon red pepper flakes
Zest of 1 lime
Juice of 1/2 lime
*Salt (use salt if using unsalted butter)
Chopped chives or cilantro (for garnish, optional)

Directions:
Pre heat oven to 375 degrees. In a bowl; mix butter, red pepper flakes, zest and juice, refrigerate for a couple of minutes. Rinse fish and pat dry; place on a baking sheet lined with parchment paper. Top each fillet with butter mixture, bake fish for 10-12 minutes or until opaque and flaky. Garnish with chives or cilantro. Serve and enjoy!

I'm leaving for vacation this week and I couldn't be more happier. Beach, here I come! But I can't leave my blog unattended and leave all of you without yummy recipes, I'll be on vacation but the blog won't. So, be sure to stop by and expect yummy and easy recipes for the upcoming days. 

This mushroom and cheese appetizer it's killer and it'll impress your guests, that's for sure! It's a perfect combination of flavors between mushroom, blue cheese and pesto. Take a look:

Ingredients:
1 naan bread
2 tablespoons pesto
1/4 cup crumbled blue cheese
1 cup white mushrooms, sliced
2 strips cooked smoked bacon, crumbled

Directions:
In a large skillet, heat olive oil over medium/high heat. Add sliced mushrooms and sauté for a couple of minutes. Season with salt and pepper. Remove from heat and let it cool slightly. Meanwhile, pre heat oven to 375 degrees. Place naan on a non stick baking sheet, bake for 5 minutes, flip it and bake for 5 minutes more. Remove crispy naan bread from oven. Spread pesto evenly on naan bread, add mushrooms, crumbled blue cheese and bacon. Cut into pieces and serve. Enjoy!

When I first started blogging, I shared this recipe without a photo to go along with and I've always regretted not taking a photo of such a beautiful dish. I though it would be fun to do a recipe do-over and I must say I love how it looks and how it taste too. Take a look:



Recipe by Sweet Caroline

Ingredients:
4 tilapia fillets
Salt and black pepper
½ white onion, diced
¼ yellow bell pepper, diced
¼ orange bell pepper, diced
2 plum tomato, diced
2 tablespoons butter
2 tablespoons olive oil
A handful of chopped parsley

Directions:
Pre-heat oven to 375 degrees. Rinse fish and pat dry; place on a non-stick baking sheet. Season each fillet with salt and pepper, drizzle with olive oil. In a bowl mix the onion, bell peppers and tomatoes. Place a little of the mixture on top of each fillet. Place a pat of butter on each fillet and cook in the oven for 10 to 12 minutes (until fish is flaky). Garnish with the parsley and serve immediately. Enjoy!

Mimosa is a classic drink served at any brunch and it's usually made with orange juice but the recipe I'm sharing today gives this old classic a bit of a twist. The sweetness from the peach combines very well with champagne or sparkling wine and it will satisfy everyone. Take a look:

Peach & Raspberry Smoothie (Vitamina de Pêssego & Framboesa)

3/4 cup frozen sliced peaches
1/2 cup frozen raspberries
1 1/2 cups soymilk
Honey

Directions:
In a blender, add all the ingredients (add the honey according to your taste) and blend until smooth. Serve and enjoy!

Mini Tart with Cream & Cherry Sauce

Who doesn't love a pretty, elegant and delicious dessert? This mini tart with cream and cherry sauce it's delicious and it takes less than half hour to be done. Take a look:

Ingredients (makes about 10-12 mini tarts):
Crust 
3 cups flour
2 sticks butter, softened
1 cup sugar
2 eggs
1 teaspoon grated lemon zest

Filling 
1/2 cup heavy cream
1 cup powdered sugar
8 oz cream cheese, softened
1 teaspoon vanilla extract

Sauce 
2 cups cherries, pitted and cut in half
2 tablespoons sugar
1/3 cup water

Directions:
Crust: In a bowl, combine all the ingredients using your hands until a dough forms. Divide dough into small balls and press each ball over bottom and sides of each mini tart tin. Press the bottom using a fork to avoid dough from puffing up while baking. Bake at 375ºF preheated oven for 10-13 minutes or until it becomes yellow golden in color. Set aside to cool. Filling: Beat the heavy cream until soft peaks form, add powdered sugar, softened cream cheese and vanilla extract, beat well. Refrigerate cream until ready to assemble tart. Sauce: In small sauce pan, heat all the add all the ingredients over high/medium heat. Keep mixing until the cherries soften and sauce thickens. Remove from heat and let it cool. To assemble simply add a generous amount of filling on center of each tart and add sauce over the top. Serve and enjoy!

Mini Vegan Banana Oatmeal Muffins

These mini muffins are vegan and delicious, they're perfect bite-size snacks to go! It's very easy to make them, give it a try. Take a look:

Ingredients (makes 32 mini muffins):
1 cup oats
1 cup soy milk
1 cup whole wheat flour
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 bananas, mashed
1 teaspoon vanilla extract

Directions:
Preheat oven to 400 degrees. In a bowl, combine oats, flour, brown sugar, baking powder and salt, set it aside. In another bowl, combine soy milk and vanilla extract. Add the mashed bananas and combine well. Add the dry ingredients and mix just until combined. Pour batter into a mini muffin pan lightly sprayed with oil. Bake for about 10-12 minutes. Serve and enjoy!

A Few Days at the Beach

We spent our 4th of July weekend at the beach, we've friends who live by the beach at Norfolk, Virginia and we were invited to spent the holiday with them. The kids loved every minute; flying a kite, running around, playing in the water, learning how to fish and playing in the sand. Take a look:

We had the opportunity to watch the firework show from the boardwalk at Virginia Beach, it was beautiful!

It has been incredibly hot these past few days, we've been drinking plenty of water to keep hydrated, I've come up with this muddled strawberry sparkling water to change things a bit. Take a look:

Ingredients (serves 1):
3-4 strawberries, chopped
1 tablespoon sugar
1 1/2 cups wild berry seltzer water
4 ice cubes

Directions:
In a glass, add the strawberries and sugar. Using a muddler, mash really well the strawberries and sugar. Add ice cubes and pour seltzer water. Garnish with strawberry. Serve and enjoy!

Today, I'm sharing a super easy and healthy dessert, I just can't believe I've said healthy dessert but it's true. And the best part, I don't feel guilty after eating this incredible dessert. Take a look:

Ingredients:
2 small avocados, chopped into chunks
3 tablespoons vegan cocoa powder
1/4 cup soy milk
Agave nectar

Directions:
In a food processor, add all the ingredients (add the agave nectar according to your taste) and pulse until smooth. Chill for a couple of minutes or serve right away, either way it's delicious. Enjoy!

Ingredientes: 
2 abacates pequenos, picados em pedaços grandes
3 colheres de sopa de cacau em pó vegano
1/4 xícara de leite de soja
Néctar de agave

Modo de preparo: 
Em um processador de alimentos, adicione todos os ingredientes (adicione o néctar de agave de acordo com o seu gosto) e pulse até ficar homogêneo. Leve à geladeira por alguns minutos ou serva de imediato, de qualquer forma é delicioso.

Pastel de Carne (Beef Empanada)

This savory fried pastry (pastel in Portuguese and empanada in Spanish) is served in many countries in South America, it's really popular and delicious! You can get creative with the filling, making different variations with chicken, shrimp and also sweet ones with guava paste, bananas and cinnamon. Today, I'm sharing my version using beef and a pre made dough which you can easily find at supermarkets. Take a look:


Recipe by Sweet Caroline

Ingredients (makes 10 empanadas):
1/2 pound ground beef
1/2 yellow onion, diced
1/2 cup frozen corn kernels, thawed
1/3 cup frozen peas, thawed
2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons tomato paste
1/2 cup water
1/2 teaspoon ground cumin
Salt and black pepper
1 (14 oz) package frozen empanada dough (I used Goya brand), thawed
Oil for frying

Directions:
To prepare filling: Heat the oil in a large pan over medium-heat high. Add the garlic and sauté until golden. Stir in the ground beef and cook until is crumbly, browned and no longer pink. Add the diced onion. Cook until tender. Add corn, peas, tomato paste and water. Season with cumin, salt and black pepper. Let it cook until water reduces. Remove from heat and let it cool slightly. To prepare empanadas: Place about 2 tablespoons of beef filling in center of dough. Turn over to form a half circle, close side by pressing with a fork. Fry empanadas in hot oil until golden brown. Transfer to a plate lined with paper towel. Serve hot and enjoy!

I can't believe it's July already, time is just flying by and it's time for this month's wish list. I'm in desperate need of baskets to store toys for the kids room and I'm really loving these white rattan basket set. I love cooking but baking it's a skill that I need to really learn more, I'm thinking about getting this baking kit to get baking some more. And how cute is this hedgehog cookie jar? I'm also loving these cheese markers and cloud shaped grater, this good morning throw pillow and a few cute notebooks to write down some ideas. Warm Potato & Green Bean Salad

Don't you love a good potato salad? I sure do! I'm pretty sure everyone has their favorite recipe, as the 4th July holiday approaches and everyone loves a good cookout or picnic, I thought I would share a different version of the classic potato salad. I love combining potatoes and green beans with a touch of lime and lemon juice and cilantro for a little kick. Take a look:


Recipe by Sweet Caroline

Ingredients:
5 large red potatoes, chopped
1 cup green beans, chopped
1 small yellow onion, diced
3 cloves garlic, minced
2 tablespoons olive oil
Handful of chopped cilantro
Juice of 1/2 lime
Juice of 1 lemon
Salt and black pepper

Directions:
In a medium pot, combine the potatoes and enough salted cold water to cover. Bring to a boil, then lower the heat and simmer until tender. Drain well and reserve. Dry the pot completely, heat the olive oil over medium/high heat. Add the minced garlic and onions, sauté until onions are translucent. Add the greens and sauté until it gets a little tender but still with a snap to it. Add the potatoes, cilantro, lime and lemon juice. Season with salt and black pepper, combine well. Transfer to a serving dish. Serve and enjoy!

* Tip *: If you like you can add mayo and it would be delish too, but it's your call!
