Timmy’s Town Center is an interactive children’s museum located at the Mall at Steamtown in
downtown Scranton, Pa. A place where kids can learn, discover and explore while they play.

Here are a few of the permanent exhibits:
The "Farmer's Market" teaches kids different types of fruits and vegetables and how to count, weigh and sort. 

My kids had tons of fun playing and learning!

Sophia loved the "Puppet Theater", perfect for kids to use their imagination. Also, they both loved playing "Dress-Up", they were pretending being doctors and taking care of babies. 

There's also the "Arter Space" where kids can draw and paint and show their artistic side.

The "Read-Cycling" encourages kids to read, discover and explore books.

Watermelon Lemonade

There's one thing that I see a lot during Summer time: kids with lemonade stands around the neighborhood. I believe it's such a classic Summer memory and I would like to introduce you to my version of my favorite lemonade: watermelon lemonade, it's a perfect combination between sweet and tartiness. Breakfast Series: Piña Colada Smoothie

Summer is finally here (which means vacation is coming up really soon)! I love hot and sunny days and to start off the summer mornings in the right note, how about a little tropical smoothie to go along? A piña colada smoothie it's so perfect to these days. Please, make sure to try one, take a look:

Recipe by Sweet Caroline

1 cup fresh pineapple, chopped
1 cup sweetened coconut flakes
1 cup vanilla soy milk
1-2 tablespoons honey or agave nectar
3-4 ice cubes

In a blender, add all the ingredients and blend into completely smooth. Serve and enjoy!

* Tip *: To garnish the rim of the glass, simply dip the rim into a plate with some honey and then dip it again into another plate with toasted coconut flakes. 

Basil Chicken with Mushrooms & Onions

Are you in need of a simple and quick dish for dinner? Then, make sure to try this basil chicken with mushrooms and onions! Put all the ingredients together in a dish and bake it, 20 minutes later it's done and ready to serve. Pretty easy, huh? Take a look:

Recipe by Sweet Caroline

2 boneless and skinless chicken breasts, chopped
1 yellow onion, diced
1 cup baby bella mushrooms, sliced
2 cloves garlic, minced
2 tablespoons basil paste
2 tablespoons olive oil
Salt and black pepper

Pre heat oven to 400 degrees. In a small dish, whisk together the minced garlic, basil paste and olive oil, set it aside. In large bowl, combine chopped chicken, onions and mushrooms. Add the paste and season with salt and black pepper. Combine everything really well, transfer to a baking dish. Bake for 20 minutes. Serve and enjoy!

Yesterday was such a beautiful day and I decided to take the kids to the park to enjoy it as much as possible. They spent the afternoon walking, playing at the playground and seeing some beautiful flowers. Take a look:

Basil & Egg Naan Pizza

I love eating pizza and I love trying new flavors too. Whoever thought of putting an egg in a pizza truly deserves an award because it's delish, people! So, go ahead and make it and see it for yourself. Take a look:

Recipe by Sweet Caroline

Ingredients (serves 2):
1 naan bread
1 tablespoon basil paste
2 cloves garlic, minced
1 tablespoon olive oil
2 eggs
Salt and black pepper
Chopped parsley for garnish (optional)

Pre heat oven to 400 degrees. In a small dish, whisk together the basil paste, garlic and olive oil. Season with salt and pepper. Spread mixture evenly onto naan bread, crack both eggs on top. Bake for 10 minutes or until eggs are done. Remove from oven, season with salt and pepper and sprinkle chopped parsley on top. Serve and enjoy!

Meatless Monday: Garlic Polenta with Sautéed Collard Greens

This dish it's what I consider comfort food and the ultimate combination! I can easily eat bowls and bowls of polenta with collard greens and never get sick of it. And I'm sure you'll love it too! Take a look:

Recipe by Sweet Caroline

For Collard Greens
1 bunch collard greens (wash and dry leaves, cut into thinly ribbons)
2 cloves garlic, minced
2 tablespoons olive oil
Salt and black pepper

Heat olive oil in a large skillet over medium/high heat. Add the garlic and sauté for about a minute. Add the collard greens and sauté for another 2 or 3 minutes until the collard greens wilts a little. Season with salt and pepper. Serve over hot polenta. Enjoy!

For Polenta
1 cup fine cornmeal
3 cloves garlic, minced
1 tablespoon olive oil
3 cups water

In medium bowl, add the cornmeal and gradually add the water while whisking everything together. In a medium pot, heat the olive oil over medium high heat. Add the minced garlic and sauté until golden in color. Add the cornmeal and water mixture into the pot. Reduce heat to medium/low. Keep whisking until it thickens. Season with salt. Serve with sautéed collard greens. Enjoy!

Zucchini Salad

The days are getting hotter and hotter everyday, creating meals in such hot weather can be a little hassle sometimes. That's why I'm sharing this salad because it's perfect to these hot days, keeps the stomach satisfied and it's also refreshing! Take a look:

Recipe by Sweet Caroline

2 zucchinis, sliced
2 small carrots, peeled and sliced
6 radishes, thinly sliced
2 tablespoons olive oil
Juice of 1 lime
Handful of chopped parsley and scallions
Salt and black pepper

In a small dish, whisk together olive oil, lime and herbs, season with salt and pepper. In a large bowl, add the sliced zucchini, carrot and radish, pour dressing and toss to combine. Refrigerate for half hour. Serve and enjoy!

Strawberry Salsa

If you've never tried strawberry salsa, you're in for a treat. It's refreshing, sweet and mild spicy, perfect snack for warmer days or nights. Take a look:

Pineapple & Coconut Cake

I love the combination between pineapple and coconut, they go so well together and the flavors remind me of tropical weather, anyways I'm sure you'll love it too. Take a look:

Recipe by Sweet Caroline

2 cups sugar
4 eggs
2 1/2 cups flour
1 cup milk
3/4 cup vegetable oil
2 1/2 teaspoons baking powder
1/2 stick unsalted butter, melted
1/2 cup light brown sugar
2 cups chopped fresh pineapple
3/4 cup sweetened coconut flakes

Preheat oven to 350 degrees. In a large bowl, beat sugar and eggs until thickened for about 1 minute. Add flour, milk, oil, baking powder and beat again for another minute until batter is smooth. In a buttered 9"x13" baking pan, pour the melted butter, sprinkle evenly the bottom with brown sugar, arrange chopped pineapple evenly on top of brown sugar, sprinkle evenly coconut flakes over pineapple. Pour the batter over to cover everything. Bake for 30-40 minutes or a toothpick inserted in the middle comes out clean. Let cake cool. Serve with ice cream if desired and enjoy!
