Salad with Beets & Feta

I'm trying my best getting back on track in eating more salads and veggies throughout the week, this salad is delicious and fills the tummy pretty well too. Take a look:

Recipe by Sweet Caroline

3 cups baby romaine mix
2 beets
2 tablespoons feta cheese
1 tablespoon roasted salted pumpkin seeds
1 tablespoon Dijon mustard
Juice of 1/2 lime
2 tablespoons olive oil
Salt and black pepper

Pre heat oven to 400 degrees. Wrap beets in aluminum foil and place in a baking dish. Bake it for 45 minutes or until tender. Remove from oven and let it cool. Once the beets are cool enough to handle, peel them and cut into wedges. Arrange baby romaine mix in a salad bowl, place beets, sprinkle the feta and pumpkin seeds. In small dish, whisk together the dijon mustard, lime juice and olive oil. Season with salt and pepper. Drizzle dressing over salad. Serve and enjoy!

I just harvested beets from my garden, and this salad looks delicious! Beets are such an under-appreciated vegetable, especially their greens.
