Pork Tenderloin Carnitas Tacos

I had never made pork carnitas before, this was my very first try and I must say it turned out pretty fantastic, at least in my humble opinion. Pork carnitas is usually made with pork shoulder or butt, but I decided to make it with pork tenderloin instead and it worked wonderfully. This is a pretty easy dish to make since it's made in the crock pot, take a look:

Ingredients (6 servings):
2-3 lbs. pork tenderloin, cut into chunks
6 cloves garlic, minced
2 yellow onions, cut in half and thinly sliced
1/2 teaspoon oregano
1 teaspoon ground cumin
1/2 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoon olive oil
Handful of chopped cilantro
Sour cream
Lime wedges

In a large bowl, add the pork tenderloin, minced garlic, half of sliced onions, oregano, cumin, chili powder, salt and black pepper. Combine well. Transfer meat to a ziplock bag and let it marinate for at least two hours. In the bottom of the crock pot, drizzle 1 tablespoon olive oil and place the meat. Cover and let it cook on high for 4 1/2 hours. Remove meat to a dish and start to pull the meat apart using forks. In a large pan, heat the remaining olive oil over medium/high heat. Add the remaining sliced onions and sauté until translucent. Add the meat and let it cook until brown in color. Add half of chopped cilantro and mix well. Serve with warm corn tortillas with sour cream, a little cilantro and lime wedges. Enjoy!
