Bowtie Pasta with Sausage and Leeks

This pasta dish is one of my favorites and the combination between sausage and leeks is perfect. You can also substitute the pasta for whole wheat if you prefer and if you don't want to use heavy cream just substitute with half cup of stock, it's totally up to you! Take a look:

Recipe by Sweet Caroline

1 lb. bowtie pasta
1 lb. sweet Italian sausage
2 leeks (cut lengthwise, thinly sliced, washed and drained)
2 cloves garlic, minced
1 tablespoon olive oil
2/3 cup heavy cream
Salt and black pepper

Heat the olive oil in a large pan over medium/high heat. Add the garlic and sauté for a minute. Add the sausage, cook until it's crumbly and changes color. Add the leeks and let sweat until soft, adding a little water to encourage softening if necessary. Meanwhile, in a large pot, add enough water and bring to a boil. Salt the water and add pasta, cook pasta until al dente. Once the leeks are soft, pour the heavy cream and allow it to cook until lightly thickened. Season with salt and black pepper. Drain pasta well and add the pasta to the sausage and leek sauce. Toss really well to combine. Serve immediately and enjoy!
