Whole Wheat Pancakes with Carrot & Apple

I made these whole wheat pancakes and the family loved it! They devoured the pancakes and didn't even noticed the carrot or apple. This is super healthy and nutritious too, perfect way to start the day. Take a look:

Recipe by Sweet Caroline

1¼ cup whole wheat flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1 egg beaten
½ teaspoon salt
1 cup milk
1 tablespoon cooking oil
1 medium carrot, peeled and grated
1/2 red delicious apple, peeled and grated

In a bowl, mix together flour, sugar, baking powder, and salt. In another bowl, combine egg, milk, and oil and add all at one to flour mixture. Stir until blended, but still slightly lumpy. Add the grated carrot and apple, mix to combine. Pour about ¼ cup batter onto a hot, lightly greased skillet or griddle. Allow them to brown on one side (this should take 2 minutes), then flip and allow them to brown on the other side. Serve warm with maple syrup. Enjoy!
