Quiche with Mushrooms, Caramelized Onions & Munster Cheese

Quiche is something that I can easily eat for breakfast, lunch or dinner. It's so filling and delicious! I made this quiche with caramelized onions, mushrooms and cheese and it's by far my favorite combination of flavors. Take a look:

Recipe by Sweet Caroline

1 1/2 cups all purpose flour
1 stick cold unsalted butter, cut into cubes
Pinch of salt
4 tablespoons ice water

1 cup baby bella mushrooms, sliced
1 small white onion, sliced
2 tablespoon olive oil
3 eggs
1/2 cup heavy cream
1/2 cup shredded munster cheese
1/2 teaspoon salt
1/2 teaspoon black pepper

In a medium bowl, combine flour and salt. Add the cold butter, using your fingers combine the butter with the flour until the mixture resembles coarse meal, with just a few pea-size pieces of butter remaining. Sprinkle the 4 tablespoons ice water and incorporate into flour mixture to moistened and to come together like a ball. Transfer to a plastic wrap and form into a disk and wrap it nicely, refrigerate for 30 minutes. Meanwhile, in a large skillet, heat half of the olive oil over medium/low heat. Add the onions and cook, stirring occasionally until caramelized. Transfer onions to a dish. Add the remaining olive and add mushrooms, sauté for a couple of minutes until being to brown. Transfer mushrooms to a dish. Pre-heat oven to 350 degrees. In a bowl, beat together the eggs, heavy cream, salt and pepper. On clean and floured surface, roll out the dough to fit a 10" springform pan. Transfer dough to your pie pan and gently press the bottom and sides to eliminate any bubbles. Using a knife, cut the top rough edges on the side to make it even. Add the caramelized onions and mushrooms, sprinkle the shredded munster cheese and pour the pour the egg mixture. Bake for 50 minutes, quiche should be puffy and golden brown. Let it cool slightly before serving. Enjoy!
