Chicken & Barley Soup

This is by far my favorite soup recipe, so delicious and so filling. This soup is usually made with rice instead of barley but since I wanted to change things a little bit I opted for the barley. Take a look:


Recipe by Sweet Caroline

1 lb. chicken breast, boneless and skinless
4 medium carrots, peeled and diced
4 ribs celery, diced
1 white onion, diced
2 tablespoon oil (vegetable or olive oil)
8 cups chicken stock
1 cup barley
Salt and black pepper

Cut chicken into bit size pieces, season with salt and pepper. In a large pot, heat the oil over medium/high heat. Add the chicken, cook completely. Add the carrots, celery and onions, allow it to cook for a couple of minutes, stirring occasionally. Pour the chicken stock, bring to a boil. Add the barley. Let it cook until the barley and vegetables are tender (about 15 minutes, depending). Serve hot and enjoy!

This looks so yummy! I love barley, but i never remember to use it or buy it. Mmmm yum!
