Recipe & a Movie Series: Lemon Meringue Pie + Waitress

Monday, September 9, 2013

Waitress is a delightful comedy-drama, it tells the story of a waitress named Jenna who wants to escape her abusive and controlling husband, she turns to her baking skills to calm her through her tumultuous life. There are funny, sad, and lots of baking pie moments (marshmallow mermaid pie, falling in love chocolate mousse pie, I hate my husband pie and more). It's a charming film and after watching it you're hungry for some pie!
In honor of Waitress, I'm sharing my favorite kind of pie: lemon meringue pie. It's tarty, delicious with a beautiful cloud of meringue right on top. It's really perfect! Take a look:

Ingredients:
1 ready made graham cracker pie crust
1 (14 oz.) can sweetened condensed milk
Juice (1/2 cup) and zest (1-2 teaspoons) from two lemons
3 eggs, yolks and whites separated
1/3 cup sugar

Directions:
Pre-heat oven to 350 degrees. In a bowl, add the condensed milk, lemon juice, lemon zest and yolks. Mix until well incorporated. Pour into the ready made graham cracker pie crust. Using a hand electric mixer or stand mixer, beat the egg whites until soft peaks form. Add the sugar gradually until stiff peaks form. Spread the meringue over the pie, bake for 15-20 minutes or until the meringue browns lightly. Remove from oven and let cool slightly, refrigerate for 2 hours before serving. Enjoy!
