Healthy Meal: Tuna with Beet Salad

This is a simple, healthy, delicious and no-cooking required dish. Super easy, right? Take a look:


Recipe by Sweet Caroline

Ingredients (serves 4):
2 cans tuna in water, drained
1 beet, peeled and shredded
1 large carrot, peeled and shredded
1 gala apple, shredded
1 tablespoon olive oil plus more for drizzling
Salt and pepper
Chopped parsley for garnish

Directions:
In a bowl, combine beet, carrot, 1 tablespoon olive oil. Season with salt and pepper, refrigerate for at least 10-15 minutes. In a ramekin dish, arrange the beet salad up to 2/3 of it, then add a few tablespoons of tuna until it reaches the top. Run a knife to the sides of the ramekin, flip it over unto a plate. Drizzle some olive oil and sprinkle some chopped parsley on top. Serve and enjoy!
