Spicy Zucchini Cakes

These zucchini cakes are tasty, delicious and spicy!

Recipe by Sweet Caroline

Ingredients (makes 12):
2 medium/large zucchini
1/2 cup seasoned italian breadcrumbs
2 eggs
1/4 teaspoon dried red pepper flakes
Salt and pepper
Oil for frying

Using a grater, shred the zucchinis. Squeeze the shredded zucchini (just use a clean kitchen towel) to remove the water. Place the shredded zucchini in a large bowl, add the breadcrumbs, eggs, pepper flakes, salt and pepper. Stir until well combined. Heat about 1/4 inch of oil in a nonstick skillet over medium/high heat. Once the oil is hot, drop by the tablespoons the mixture into the skillet and using the back of the spoon just flatten a bit. Let it cook for about 2 minutes on each side or until golden in color. Transfer the hot cakes to a plate with paper towels. Serve warm.
