Blackberry Crumble

My backyard is in full bloom and so it's my blackberry bush, now I've to come with some recipes to take full advantage of this great and juicy little fruit. This week, I made a simple and quick crumble which it's perfect to eat with some ice cream. Can you say: yummy? Take a look:

Recipe adapted from the FoodNetwork

Ingredients (makes 5):
1/3 cup flour
1/3 cup light brown sugar
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
Pinch salt
1/3 cup oats
4 tablespoons cold butter, cut into small pieces
2 cups fresh blackberries
1/3 cup granulated sugar
1 tablespoon cornstarch

Pre heat oven to 350 degrees. In a bowl, combine flour, brown sugar, sugar, cinnamon, salt and oats. Add butter and cut it into the mixture using your hands, a fork or a pastry blender until the butter are the size of peas. In another bowl, combine the blackberries, 1/3 sugar and cornstarch. Divide evenly the fruit between the ramekins and top with the crumble mixture. Bake for about 30-35 minutes until golden and bubbly. Serve warm with or without ice cream. Enjoy!
