Perfect Sauce with Fish or Chicken #1: Mustard and Thyme Sauce

Thursday, July 18, 2013

We love to eat a lot of fish or chicken during the Summer season. Trying to come upon with different recipes for the same dish can sometimes become boring, that's why I love to prepare fish or chicken the same way (either baked, grilled or pan-seared) and add a different simple sauce - which is much easier to do.

That's why I'm sharing this sauce today, perfect for either one. The fish was seasoned with salt and pepper and baked until flaky. It's the sauce that gives life to the dish.

I'll be sharing another sauce soon! So, don't miss it! Now, on to the recipe, take a look:

Recipe by Sweet Caroline

Ingredients:
1 clove garlic, minced
2 tablespoons olive oil
1/4 cup white wine
1/2 cup heavy cream
2 tablespoons dijon mustard
1 tablespoon fresh thyme, chopped

Directions:
In a saucepan, heat the olive oil over medium/high heat, add the minced garlic. Sauté until golden in color. Pour the wine and stir until is reduced by half. Add the cream, mustard and thyme. Let it cook, stirring constantly until thickened. Serve over cooked fish or chicken. Enjoy!

So glad you reminded me of this classic French sauce. I love how simple your version is so easy to make for a week night. Thanks for sharing it with us on foodie friday. Pinning this.

This looks delicious! Any recommendations for what fish this works best with?

Elizabeth, I used tilapia and it was delicious but I guess any fish will be great too. I hope it helps. =]
