Butternut Squash with Garlic and Onion

1 medium butternut squash (peeled, seeds removed, cut into 1-inch pieces)
1/2 white onion, diced
2 cloves of garlic, minced
2 tablespoons of parsley, finely chopped
2 tablespoons of olive oil
salt and pepper

In a medium pot, combine the butternut squash and enough salted cold water to cover. Bring to a boil, then lower the heat and simmer until tender. Drain well. Dry the pot you were using, put it over medium heat, add the olive oil, garlic and onions. Cook until the onions are translucent. Add the butternut squash and parsley, toss really well. Season with salt and pepper. Serve.
